Description

The second edition of the popular Gaia series by Waterford Distillery. Made from 100 percent natural and organic malt. After maturing in First Fill Casks from the USA (39%), unoccupied oak barrels (17%), premium wine barrels from France (19%) and Vin Doux Naturel barrels filled with sweet wines (25%). Boasts a delightful palate of spicy, white pepper, grapefruit, dry heat, liquorice, cherries, cocoa powder, wine gum, dry toast, salted peanuts, and lemon peel.

Producer

Waterford Distillery was founded by the same mind behind Islay's Bruichladdich with the goal to not just create the most compelling Irish whisky, but the world's most profound single malt.

The Distillery is located in Waterford, on the banks of the River Suir. The state-of-the-art facility was originally built by Diageo in 2004 and converted to distilling in 2015.

The first whisky ran in January 2016, marking the 'first' Irish organic whiskey. This new expression is part of Waterford Distillery’s Arcadian Series, which pays tribute to radical growers and alternative values such as heritage grains and unusual growing methods.
