After being dissatisfied with outdated beers, Tore Gynther and Tobais Emil Jensen decided to begin gypsy brewing in 2010 around various micro-breweries. As of 2019, the team took over a former food factory in the Western part of Zealand, Denmark and converted it into a specially designed brewery and craft beverage hub, called To Ol City.
