When Mr. Paul P John decided to create single malt whiskies in India, he traversed the lanes of Scotland to learn about its distilleries and whisky culture. Paul John Distillery started in 1996 and soon launched The Great Indian Single Malt to award-winning acclaim. Goa features a tropical monsoon climate, and being in the tropical zone and near the Arabian Sea, has a hot and humid climate for most of the year. The hot weather makes whisky mature faster in India than it does in Europe or the United States. The fraction lost to evaporation during aging, known as the angels' share, is also higher in India.
The indigenous ingredients and the warm environs of Goa, double-distillation in copper pot stills with long necks, and maturation in white oak barrels create the magic that is Paul John Single Malts.
