A first for Irish winemaking! This is the first vintage of Sparkling Wine produced by Lusk based David Llewellyn. A single variety, Blanc de Noir wine, this is utterly unique and is composed exclusively of Cabernet Sauvignon grapes grown at Lusca vineyard in Co. Dublin. The grapes were gently pressed immediately after harvest, on 24th October 2018, gently extracting only the delicate bright pink colour from the skins of the grapes. The wine was cool fermented to full dryness and rested on the lees for 6 months, with intermittent stirring of the lees, before bottling. The wine was aged for 12 months in bottle, on its lees, before riddling and disgorging by hand.
