Founded on a love for barrel-ageing and hybrid styles, Shane Kelly, owner of DOT Brew crafts beers from various microbreweries in and around Dublin before bringing them 'home' to Dolphin's Barn. Shane affectionately refers to the warehouse as his 'spice rack' which includes casks which have been matured in French oak, Mexican tequila and American bourbon to name a few.
