A drink that came to life shortly after the prodiction and sale of Absinthe was outlawed in France. Pernod was one of the leader makers of Absinthe at the time and the company was quick to reformulate a less aggresive drink that would appeal to their customers. Pastis does not contain any wormwood but has a similarly distinct aniseed taste. In the case of Pernod the main flavourings are star anise, fennel, camomile, coriander and veronica amongst others. When mixed with water the liquid creates a 'louche' or cloudiness which has always been seen as a mark of quality for pastis and absinthe. Pernod is commonly poured over ice with water added at the drinker's discretion. Another popular way to drink it is with blackcurrant liqueur.
